Cucumber Salad


1 English cucumber thinly sliced then halved

2 tablespoon mirin

2 tablespoon sesame oil

2 tablespoon rice vinegar

2 tablespoon sesame seeds

Salt, to taste


In a separate, smaller bowl, whisk together the mirin, sesame oil and rice vinegar. Season to taste with salt. Drizzle the dressing over the sliced cucumber and toss. Refrigerate until ready to serve. When you serve sprinkle sesame seeds.

Note:  You can add other veggies too like red peppers and carrots!
