Tomatillo Salsa

 

Ingredients:

1 lb tomatillos husked and washed

½ medium onion white

Half a garlic clove peeled

1 jalapeno ribbed and seeded (unless you like it hot keep it)

½ bunch of cilantro roughly chopped

2 limes zested and juiced

Salt to taste

Put in a large skillet with water covering just the base of all the ingredients but the lime and cilantro.

Bring to a boil then cover and let simmer around 10 min.

Once cooled and put in the food processor or blender add cilantro and lime with zest.

Puree til thin!

 

Note:

Serve with organic baked corn chips, salad, veggie dip, or our enchilada recipe.
